A nutrient dense, gut nourishing, immune invigorating, collagen boosting Veggie Broth – to strengthen, replenish and guide you through the Winter blues.

We drink this broth straight, and use it as the base of soups, stews & curries, you can even use it as a replacement for water in rice/quinoa/lentils. The perfect disguise for even the fussiest of eaters!

  • 12 cups / 3 litres of water
  • 1 garlic bulb, smashed
  • 1 chilli, finely chopped
  • 1 thumb-sized piece of ginger, grated
  • 1 thumb-sized piece of fresh turmeric, grated (or 1 tbsp. powder)
  • 1 tbsp. coconut oil
  • 1 tbsp. peppercorns (the combination of coconut oil and pepper with turmeric, increases the absorption and benefits of the elements of turmeric such as curcumin)
  • Seaweed – we added in 1 tbsp. of Atlantic dulse, but you can use any type of seaweed. Maybe you have your own incredible source straight from the sea?
  • Handful of garden greens – bok choy, silverbeet, puha, watercress, sprayfree foraged weeds such as dandelion, purslane, stinging nettle etc.
  • Few twigs each of thyme, sage, oregano, rosemary, tarragon etc.
  • 4 cups of chopped veg – mushrooms, carrots, beetroot, leeks, celery (any leftover organic potato peelings)
  • 1/2 cup dried shiitake mushrooms
  • 1 broccoli roughly chopped
  • Handful of fresh herbs such as coriander and parsley
  • 1/2 cup nutritional yeast
  • 1/4 cup miso

Add everything except for the bottom 4 rows of ingredients to a large pot.

Bring to a boil, then simmer with the lid on for about 40 minutes.

Add the broccoli and cook for another 10 minutes, then take the pot off the heat and add the last of the ingredients. Allow to cool.

Now it is ready to strain this liquid gold into a large bowl, be sure to drink a steaming mug of it, and then freeze the rest into portions.

  • We sourced most of our beautiful Veg from our local Co-op ‘Wholey Health‘ in Whakapara, because we love supporting local organic and spray-free growers.
  • The herbs we grow at home such as the oregano, thyme and sage, I recommend if you can grow nothing else, please plant these humble culinary stars. Thyme for example contains 3 times more vitamin C than oranges!
  • Mushrooms are a big component of our broth, they are nutritional Rockstars, we use both fresh, and dried which you can get in most Supermarkets.
  • Nutritional yeast is an amazing source of B Vitamins, and adds a delicious depth of umami flavour to the broth, as does Miso, the fabulous fermented food. Putiputi Ra in Whangārei stocks Nutritional yeast, Bin Inn may also stock in most places, and Ceres is an Organic brand if you can find a Stockist.
  • If you grow your own organic veg, freeze your carrot and potato peels, waste not want not, they make a frugal addition to your broth.
  • We know how expensive organic veg can be if you do not belong to a co-op, so if you do need to buy veg from the supermarket soak it in baking soda first to help reduce pesticides, and bless this kai. All food is still a gift from our Mama Earth.
